Morning Glory Muffins

Ingredients
- 2-1/2 c. sugar
- 4 c. all-purpose flour
- 4 tsp. cinnamon
- 4 tsp. baking soda
- 1 tsp. salt
- 1 c. raisin, plumped in water or brandy, drained
- 1 c. coconut, shredded
- 4 c. carrots, shredded
- 2 apples, shredded
- 1 c. pecans, finely chopped
- 6 eggs
- 2 c. vegetable oil
- 1 tsp. vanilla extract
Preparation
- 1.Sift dry ingredients into large bowl.
- 2.Dust raisins with flour; add coconut, fruit, and nuts. Add to dry ingredients. Stir well.
- 3.Add eggs, oil, and vanilla, stirring until combined.
- 4.Cover and let stand in refrigerator for 24 hours to ripen.
- 5.Bake in cupcake tins at 375 degrees for 20 minutes. Test with cake tester. These freeze very well.
