Morning Glory Muffins

  • 2-1/2 c. sugar
  • 4 c. all-purpose flour
  • 4 tsp. cinnamon
  • 4 tsp. baking soda
  • 1 tsp. salt
  • 1 c. raisin, plumped in water or brandy, drained
  • 1 c. coconut, shredded
  • 4 c. carrots, shredded
  • 2 apples, shredded
  • 1 c. pecans, finely chopped
  • 6 eggs
  • 2 c. vegetable oil
  • 1 tsp. vanilla extract


  1. 1.Sift dry ingredients into large bowl.
  2. 2.Dust raisins with flour; add coconut, fruit, and nuts. Add to dry ingredients. Stir well.
  3. 3.Add eggs, oil, and vanilla, stirring until combined.
  4. 4.Cover and let stand in refrigerator for 24 hours to ripen.
  5. 5.Bake in cupcake tins at 375 degrees for 20 minutes. Test with cake tester. These freeze very well.
