Squash Casserole

Ingredients
- 2 lbs yellow squash
- 3 tsp butter
- 1 cup Ritz crackers
- 1 cup grated cheddar cheese
- 2 chopped onions
- black pepper to taste
- 1/2 cup milk
- 1 egg
- 1/2 tsp salt
Preparation
- 1.Boil squash and onion until tender and mash. Add salt, pepper, butter, cracker crumbs, 1/2 of grated cheddar cheese, milk and egg; stir. Pour into a casserole dish. Top with remaining cheese and a few cracker crumbs. Bake at 350 degrees for 45 minutes.
