Overnight Coffee Cake

  • 3/4 cup margarine
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon cinnamon
  • 2 cups flour
  • 1 teaspoon baking bowder
  • 1 teaspon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon nutmeg
  • 1 cup sour cream
  • 1 cup pecans or walnuts, chopped (optional)


  1. 1.For cake: cream shortening, sugar, and eggs. Sift dry ingredients together. Mix with creamed mixture.
  2. 2.Add sour cream and nuts.
  3. 3.Pour into 9" x 13" greased baking pan.
  4. 4.For topping: mix 1/2 cup brown sugar and 1 teaspoon cinnamon. Sprinkle topping over the cake batter in pan.
  5. 5.Cover and refrigerate overnight. Next morning, preheat oven to 350 degrees and bake for 35 to 40 minutes.
  6. 6.This is a great make-ahead breakfast treat. Try it during the holidays and your company will wake up to wonderful smells coming from your kitchen.
