Blackberry Pie for Two

Ingredients
- 1 quart blackberries
- ½ cup sugar (or Splenda)
- ¼ cup flour
- 1 teaspoon cinnamon
- 1 sheet readymade pie crust
Preparation
- 1.Preheat oven to 425 deg F
- 2.Mix flour, sugar (or Splenda), and cinnamon in a small bowl. Place blackberries in another bowl and sprinkle about half of the flour mixture on top. Gently toss the berries to mix coat them with the flour mixture. Then sprinkle the remaining flour over the berries and toss to coat.
- 3.Lightly grease an 8 inch pie pan with spray shortening. Unroll the pie crust and lay it in the pan, but do not press it into place. Spoon the flour-coated berries into the center of the pie crust. Spread the berries out to form an even layer about two or three berries thick.
- 4.Fold the sides of the pie crust up over the berries in a free-form tart shape. The pie crust should form pleats around the berries. In this way, the sides of the pie crust form a “top” crust and leave a 3 to 4 inch opening in the center exposing the berries. This little pie will not fill up the pie pan, so don’t worry if there is extra space.
- 5.Sprinkle a little sugar (or Splenda) over the top of the pie and bake it for 30 to 35 minutes. Let cool for at least 30 minutes before serving. Serve with ice cream or whipped cream.
